Description

This hot Italian venison sandwich features tender, flavorful venison roast infused with Italian seasonings, topped with cheese and roasted peppers, all served on crusty Italian bread.


Ingredients

  • 1 (3-pound) venison roast, trimmed of silver skin
  • 2 tablespoons olive oil
  • 1 packet Good Seasons Zesty Italian salad dressing mix
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 3 cups venison or beef broth
  • 1/2 cup roasted red peppers
  • 1/2 cup sliced Golden Greek Peperoncini
  • 1/2 cup Provolone or Mozzarella cheese
  • 1 pound Italian loaf of bread or hoagie buns
  • 2 tablespoons butter

Instructions

  1. Add the beef broth, salad dressing mix, garlic powder, onion powder, rosemary, and oregano to the slow cooker.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  3. Once the oil is hot, add the venison roast. Brown it on all sides for about five minutes.
  4. Transfer the roast to the slow cooker and cover. Cook on high for 5 to 6 hours or low for 8 to 10 hours, until the meat easily shreds with a fork.
  5. When ready to serve, preheat your oven to ‘Broil.’
  6. Slice the Italian loaf or buns in half lengthwise.
  7. Spoon the hot shredded meat mixture on the bottom slice of bread, then add roasted red peppers, peperoncini, and cheese.
  8. Butter the top slice of bread and add more shredded cheese, if desired.
  9. Place the top and bottom of the sandwich on a rimmed baking sheet and broil for about 2 minutes until cheese bubbles and browns.
  10. Serve immediately and enjoy the deliciousness!

Notes

For added flavor, consider marinating the venison in the broth with seasonings a couple of hours before cooking.
