Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1/2 pound mushrooms, sliced
  • 6 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups cooked pasta (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened.
  2. Add the carrots and celery, cooking for about 5 minutes until they begin to soften.
  3. Stir in the zucchini and mushrooms, cooking for another 5 minutes.
  4. Pour in the chicken or vegetable broth and diced tomatoes.
  5. Season with oregano, basil, salt, and pepper. Bring the soup to a boil and then reduce the heat to simmer for 20-25 minutes.
  6. If using, stir in the cooked pasta just before serving.
  7. Garnish with fresh parsley and enjoy your comforting soup!
