Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1/2 pound mushrooms, sliced
- 6 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups cooked pasta (optional)
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened.
- Add the carrots and celery, cooking for about 5 minutes until they begin to soften.
- Stir in the zucchini and mushrooms, cooking for another 5 minutes.
- Pour in the chicken or vegetable broth and diced tomatoes.
- Season with oregano, basil, salt, and pepper. Bring the soup to a boil and then reduce the heat to simmer for 20-25 minutes.
- If using, stir in the cooked pasta just before serving.
- Garnish with fresh parsley and enjoy your comforting soup!
