- 28 ounces Fresh or canned tomatoes
- 1 medium Onion
- 3 cloves Garlic
- 4 cups Vegetable broth
- 2 tablespoons Olive oil
- 1 cup Fresh basil, chopped
- 1 teaspoon Oregano
- Salt and pepper to taste
- 2 cups All-purpose flour
- 1 tablespoon Baking powder
- 1 teaspoon Salt
- 1 cup Cheddar cheese, shredded
- 1 tablespoon Fresh parsley, chopped
- 3/4 cup Milk
- 1/2 teaspoon Garlic powder
- 2 tablespoons Butter, melted
Instructions
- Begin by heating the olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
- Stir in minced garlic and cook for one minute, releasing fragrant oils.
- If using fresh tomatoes, add them now. Stir and let cook for about 10 minutes until they soften. If using canned tomatoes, simply add them to the pot along with their juices.
- Pour in vegetable broth and bring to a simmer. Add basil, oregano, salt, and pepper. Let the soup simmer for about 20-30 minutes to blend flavors.
- While the soup simmers, prepare the dumplings. Mix flour, baking powder, and salt in a medium bowl. Stir in shredded cheddar and parsley.
- In a separate bowl, whisk together milk, garlic powder, and melted butter. Combine wet and dry ingredients until just mixed.
- Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for about 15-20 minutes until dumplings are fluffy and cooked through.
- Use an immersion blender for a smooth soup or leave it chunky based on preference.
- Serve warm, garnished with additional basil if desired.
Notes
Consider roasting tomatoes for added flavor and experimenting with different herbs and cheeses for the dumplings.
