Description

Delicious Birria Tacos featuring tender beef marinated in spices and served with fresh toppings.


Ingredients

  • 2 lbs beef chuck or brisket
  • 4 guajillo chiles, seeds removed
  • 2 ancho chiles, seeds removed
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tsp oregano
  • 4 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Oaxacan cheese (or mozzarella)
  • Chopped cilantro and onions for garnish

Instructions

  1. Start by soaking the guajillo and ancho chiles in hot water for about 15 minutes until softened.
  2. In a blender, combine the softened chiles, quartered onion, garlic, cumin, oregano, and a bit of the soaking water. Blend until smooth.
  3. Season the beef with salt and pepper, then place it in a large pot. Pour the blended sauce over the beef, add the beef broth, and bring to a boil.
  4. Lower the heat, cover, and simmer for about 120-180 minutes, or until the beef is tender and easily shredded.
  5. Once done, shred the beef and keep it warm.
  6. In a frying pan, heat a little oil, dip the corn tortillas in the consommé to soak, then fry them until crispy.
  7. Fill each taco with shredded beef and Oaxacan cheese.
  8. Serve with broth on the side for dipping and garnish with chopped cilantro and onions.

Notes

Allow the beef to marinate in the spices for a few hours or overnight for enhanced flavor.
