Ingredients

  • 2 cups blackberries
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • Ice cream (for serving, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Mix blackberries with 1/4 cup of sugar and set aside.
  3. Cream together butter and the remaining sugar until light.
  4. Beat in eggs, one at a time, mixing well after each addition.
  5. Stir in flour, baking powder, salt, vanilla extract, and milk until just blended.
  6. Pour half of the batter into the prepared dish, pour the blackberry mixture on top, and then spread the remaining batter over the blackberries.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool slightly before serving. Enjoy with ice cream or milk if desired.

Notes

For best results, use fresh blackberries. If using frozen, reduce baking time slightly and toss blackberries in flour before adding to the batter.
