Delightful blackberry cobbler bars with a crumbly oat crust, perfect for sharing.
Ingredients

- 1 cup all-purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- 2 cups fresh blackberries
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a bowl, mix the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
- Add the melted butter and mix until crumbly.
- Press half of the mixture into the bottom of the prepared pan.
- In another bowl, combine the blackberries, lemon juice, and cornstarch. Stir gently to coat the berries.
- Spread the blackberry mixture over the crust in the pan.
- Crumble the remaining oat mixture on top of the blackberries.
- Bake for 30-35 minutes, or until golden on top.
- Let cool before cutting into bars.
Notes
Use ripe blackberries for the best flavor. Allow bars to cool completely before slicing.
