Delightful blackberry cobbler bars with a crumbly oat crust, perfect for sharing.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 cups fresh blackberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a bowl, mix the flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  3. Add the melted butter and mix until crumbly.
  4. Press half of the mixture into the bottom of the prepared pan.
  5. In another bowl, combine the blackberries, lemon juice, and cornstarch. Stir gently to coat the berries.
  6. Spread the blackberry mixture over the crust in the pan.
  7. Crumble the remaining oat mixture on top of the blackberries.
  8. Bake for 30-35 minutes, or until golden on top.
  9. Let cool before cutting into bars.

Notes

Use ripe blackberries for the best flavor. Allow bars to cool completely before slicing.
