- 1 cup sifted flour
- ½ cup butter, softened
- 1 cup granulated sugar
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- 4 cups fresh blueberries
- 2 tablespoons flour (for coating the blueberries)
- 2 tablespoons sugar (for coating the blueberries)
Instructions
- Preheat your oven to 375 degrees.
- Place the blueberries in a large bowl, then sprinkle 2 tablespoons of flour and sugar over the berries. Toss until the blueberries are thoroughly coated.
- Pour the blueberry mixture into a buttered 8″ by 8″ baking dish, spreading it evenly.
- In a separate bowl, cream together 1 cup of flour, ½ cup of butter, 1 cup of sugar, ½ teaspoon of salt, and ½ teaspoon of baking powder using a pastry blender until the mixture resembles coarse crumbs.
- Stir ½ teaspoon of vanilla extract into the crumbly mixture.
- Sprinkle this topping evenly over the blueberry mixture in the baking dish.
- Bake in the preheated oven for 45 to 55 minutes, or until the topping is a delightful golden brown color.
- Once done, transfer the baked crisp to a wire rack to cool for 30 minutes before serving.
Notes
Serve with whipped cream or vanilla ice cream for an extra treat. Leftovers can be stored in the refrigerator for up to 3 days.
