- 1½ cups (370g) plain Greek yogurt (2% or full-fat for richness)
- 1 tablespoon honey or maple syrup (or erythritol for keto)
- ½ teaspoon vanilla extract
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional for added sweetness)
- 1 teaspoon chia seeds (optional for texture)
Instructions
- Prepare the Blueberry Compote: Combine the blueberries, lemon juice, and optional honey in a small saucepan over medium heat. Cook for about 5–6 minutes, stirring often, until the berries soften and release their juices. Lightly mash with a spoon for a jam-like texture. Remove from heat and stir in chia seeds if using.
- Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey. Taste and adjust sweetness as desired.
- Assemble the Bites: Spoon approximately 1 tablespoon of the yogurt mixture into each cavity of your silicone tray. Fill each divot about three-quarters full. Add ½ teaspoon of the cooled blueberry compote on top, using a toothpick for gentle swirling.
- Freeze: Place the filled tray flat in your freezer for at least 120 minutes or until firm.
- Serve & Store: Carefully pop the bites out of the molds. Store in an airtight container in the freezer. Before serving, let them thaw for 2-4 minutes.
