- 1 cup fresh blueberries
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup sour cream
- 1/4 cup butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/4 cup brown sugar (for crumble topping)
- 1/4 cup flour (for crumble topping)
- 2 tablespoons butter (for crumble topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Cream together the softened butter and sugar until fluffy.
- Add the eggs, sour cream, lemon juice, and lemon zest to the mixture, and mix until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl. Slowly add this dry mixture to the wet ingredients until just combined.
- Fold in the blueberries gently.
- Mix together brown sugar, flour, and butter for the crumble topping until crumbly.
- Pour the batter into the prepared loaf pan and sprinkle the crumble topping on top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Wash and dry blueberries before using to prevent excess liquid. For extra lemon flavor, increase zest. Store leftovers at room temperature for up to three days.
