- 3/4 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F and prepare muffin tins with liners.
- Combine sugar, milk, vegetable oil, eggs, and vanilla extract in a large bowl and whisk until smooth.
- Add flour, baking powder, cornstarch, and salt to the wet mixture and stir gently until just combined.
- Fold in the blueberries gently to avoid breaking them.
- Portion the batter into the prepared muffin tins using two spoons or an ice cream scoop.
- Bake for 20-25 minutes or until golden brown and a skewer inserted comes out clean.
- Allow to cool slightly before serving.
Notes
For added sweetness, sprinkle granulated sugar on top before baking. Experiment with different flavor extracts for variety.
