Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F and prepare muffin tins with liners.
  2. Combine sugar, milk, vegetable oil, eggs, and vanilla extract in a large bowl and whisk until smooth.
  3. Add flour, baking powder, cornstarch, and salt to the wet mixture and stir gently until just combined.
  4. Fold in the blueberries gently to avoid breaking them.
  5. Portion the batter into the prepared muffin tins using two spoons or an ice cream scoop.
  6. Bake for 20-25 minutes or until golden brown and a skewer inserted comes out clean.
  7. Allow to cool slightly before serving.

Notes

For added sweetness, sprinkle granulated sugar on top before baking. Experiment with different flavor extracts for variety.
