- 4 pieces bacon, diced
- 3 eggs, scrambled
- 2 cups cooked rice
- 2 green onions, sliced
- Hot sauce (optional)
- Salt and pepper to taste
Instructions
- Cook the diced bacon in a nonstick skillet or well-seasoned cast iron pan over medium heat until crispy, about 6 minutes.
- Drain all but 1 tablespoon of the bacon fat from the pan.
- Lower the heat to medium-low and add the scrambled eggs, gently moving them around until fully cooked, about 2 minutes.
- Add the cooked rice and sliced green onions, cooking and stirring until heated through, about 3-5 minutes.
- Check the seasoning and adjust with salt and pepper as needed.
- Divide the breakfast fried rice between plates and garnish with hot sauce if desired. Serve immediately.
Notes
Use leftover rice for the best texture. This dish is highly versatile – feel free to add vegetables or different proteins as desired.
