Description

A comforting and satisfying way to kick off your day, this breakfast fried rice combines crispy bacon and fluffy scrambled eggs with leftover rice for a fast and delicious meal.


Ingredients

  • 4 pieces bacon, diced
  • 3 eggs, scrambled
  • 2 cups cooked rice
  • 2 green onions, sliced
  • Hot sauce (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the diced bacon in a nonstick skillet or well-seasoned cast iron pan over medium heat until crispy, about 6 minutes.
  2. Drain all but 1 tablespoon of the bacon fat from the pan.
  3. Lower the heat to medium-low and add the scrambled eggs, gently moving them around until fully cooked, about 2 minutes.
  4. Add the cooked rice and sliced green onions, cooking and stirring until heated through, about 3-5 minutes.
  5. Check the seasoning and adjust with salt and pepper as needed.
  6. Divide the breakfast fried rice between plates and garnish with hot sauce if desired. Serve immediately.

Notes

Use leftover rice for the best texture. This dish is highly versatile – feel free to add vegetables or different proteins as desired.
