- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1 cup caramel candies, unwrapped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the brown sugar, granulated sugar, and softened butter until smooth and fluffy.
- Beat in the eggs one by one, followed by vanilla extract.
- Sift together the flour, baking soda, salt, and cinnamon in a separate bowl.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Take a spoonful of dough, place a piece of caramel in the center, and cover with more dough.
- Shape the dough into balls and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden and centers look slightly underbaked.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough before baking. Store cookies in an airtight container with a slice of bread to maintain moisture.
