Ingredients

- 1 small head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks of celery, chopped
- 4 cloves of garlic, minced
- 6 cups of vegetable broth
- 1 can of diced tomatoes
- Salt and pepper to taste
- Optional: shredded chicken, ground beef, sausage
Instructions
- In a large pot, sauté the onion, carrots, celery, and garlic until tender.
- Add the chopped cabbage and cook for another few minutes.
- Pour in the vegetable broth and diced tomatoes.
- Season with salt and pepper to taste.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- For a heartier soup, you can stir in shredded chicken, ground beef, or sausage.
