Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups shredded cheese (such as cheddar or Monterey Jack)
  • 1 cup red enchilada sauce
  • 8 flour or corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, half of the cheese, onion, cumin, salt, and pepper in a mixing bowl.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  6. Bake for about 25–30 minutes until the cheese is bubbly and golden.
  7. Serve warm, topped with sour cream and cilantro if desired.

Notes

For a crunchier topping, consider broiling the dish for a few minutes at the end, keeping an eye on it to prevent burning.
