- 2 cups cooked rotisserie chicken, shredded
- 2 cups shredded cheese (such as cheddar or Monterey Jack)
- 1 cup red enchilada sauce
- 8 flour or corn tortillas
- 1/2 cup diced onion
- 1/2 cup sour cream
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the shredded chicken, half of the cheese, onion, cumin, salt, and pepper in a mixing bowl.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for about 25–30 minutes until the cheese is bubbly and golden.
- Serve warm, topped with sour cream and cilantro if desired.
Notes
For a crunchier topping, consider broiling the dish for a few minutes at the end, keeping an eye on it to prevent burning.
