- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 1/2 cups long-grain rice (not instant)
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 1/2 cups shredded cheese
Instructions
- Brown ground beef in a large skillet over medium-high heat until no longer pink, about 5-7 minutes.
- Add diced onion, bell pepper, and garlic. Sauté until vegetables are softened, about 3-4 minutes.
- Stir in uncooked rice, paprika, cayenne pepper, oregano, salt, and pepper. Cook for 2 minutes to toast the rice slightly.
- Pour in beef broth and diced tomatoes (with juice). Bring to a boil, then reduce heat to low.
- Cover and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
- Sprinkle cheese on top, cover, and let sit for 5 minutes until cheese is melted.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For a spicier version, add more cayenne pepper or include diced jalapeños.
- You can substitute ground turkey for a lighter option.
