  • 3 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheese

Instructions

  1. Brown ground beef in a large skillet over medium-high heat until no longer pink, about 5-7 minutes.
  2. Add diced onion, bell pepper, and garlic. Sauté until vegetables are softened, about 3-4 minutes.
  3. Stir in uncooked rice, paprika, cayenne pepper, oregano, salt, and pepper. Cook for 2 minutes to toast the rice slightly.
  4. Pour in beef broth and diced tomatoes (with juice). Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  6. Sprinkle cheese on top, cover, and let sit for 5 minutes until cheese is melted.
  7. Serve hot, garnished with fresh herbs if desired.
