- 2 medium zucchinis
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C).
- Grate the zucchinis and place them in a clean towel to squeeze out excess moisture.
- In a bowl, combine the grated zucchini, cheddar cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well.
- Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
- Spray the tops with olive oil spray.
- Bake for about 20-25 minutes or until golden brown and crispy.
- Serve warm and enjoy!
Notes
For a crunchier exterior, increase the baking time by a few minutes. Serve with your favorite dipping sauce.
