Ingredients

  • 2 medium zucchinis
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grate the zucchinis and place them in a clean towel to squeeze out excess moisture.
  3. In a bowl, combine the grated zucchini, cheddar cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Form the mixture into small tots and place them on a baking sheet lined with parchment paper.
  5. Spray the tops with olive oil spray.
  6. Bake for about 20-25 minutes or until golden brown and crispy.
  7. Serve warm and enjoy!

Notes
