- 1 cup unsweetened shredded coconut
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon coconut extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and coconut extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- Fold in the shredded coconut until evenly distributed.
- Drop tablespoonfuls of the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before baking for a more defined shape and enhanced flavors. Store in an airtight container at room temperature for up to a week.
