Delicious and chewy coconut cookies that combine the rich taste of butter and brown sugar with the sweet, nutty essence of coconut.


Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon coconut extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and coconut extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  5. Fold in the shredded coconut until evenly distributed.
  6. Drop tablespoonfuls of the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before baking for a more defined shape and enhanced flavors. Store in an airtight container at room temperature for up to a week.
