- 1 lb cooked chicken, diced
- 1 cup mushrooms, sliced
- 1 cup frozen peas and carrots
- 1/2 cup pimentos, diced
- 1/4 cup butter
- 1/4 cup flour
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Cooked rice or pasta for serving
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the mushrooms and cook until tender.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth and bring to a simmer.
- Add the heavy cream, diced chicken, peas and carrots, and pimentos.
- Cook until heated through and thickened, about 5 minutes.
- Season with salt and pepper.
- Serve over cooked rice or pasta.
Notes
Use leftover chicken for convenience. Adjust the thickness of the sauce by varying the amount of flour and cream.
