Ingredients

  • 1 lb cooked chicken, diced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas and carrots
  • 1/2 cup pimentos, diced
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Cooked rice or pasta for serving

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the mushrooms and cook until tender.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth and bring to a simmer.
  5. Add the heavy cream, diced chicken, peas and carrots, and pimentos.
  6. Cook until heated through and thickened, about 5 minutes.
  7. Season with salt and pepper.
