- ¼ tsp black pepper
- 4 large flour tortillas (burrito size)
- 2 cups cooked rice (white or brown)
- 1 can (15 oz) black beans (rinsed & drained)
- 1 cup shredded cheddar cheese
- 1 cup fresh pico de gallo
- ½ cup sour cream (or Greek yogurt)
- 1 avocado (sliced or guacamole)
- 1 cup shredded lettuce
- 2 tbsp chopped fresh cilantro
- Hot sauce (optional)
- Pickled jalapeños (optional)
- Cotija cheese (optional garnish)
- Lime wedges (for serving)
Instructions
- Marinate the chicken by mixing olive oil, lime juice, cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper in a bowl. Add the chicken, ensuring it is well coated. Marinate for at least 30 minutes, preferably up to 2 hours.
- Grill or pan-sear the marinated chicken over medium-high heat until fully golden and internal temperatures reach 165°F (75°C), about 6-8 minutes per side. Remove from heat and let rest.
- Warm the tortillas in a skillet or microwave until soft and pliable.
- Begin layering the burritos by placing cooked rice and black beans in the center of each tortilla. Top with sliced chicken, shredded cheese, pico de gallo, cilantro, and other desired toppings like sour cream, avocado, or hot sauce.
- Carefully fold the sides of the tortilla inwards and roll up from the bottom to create a secure burrito.
- Optionally, grill the wrapped burrito for an additional 2-3 minutes per side for a crispy exterior.
- Serve the burritos warm, garnished with lime wedges and optional toppings.
