- 2 cups fresh pineapple chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, cut into wedges
- 0.25 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 0.5 teaspoon black pepper
Instructions
- Whisk soy sauce, olive oil, honey, lime juice, garlic, ginger, and black pepper in a bowl.
- Add cubed chicken to the marinade, ensuring all pieces are well-coated. Let it marinate for at least 30 minutes.
- Preheat your grill to 400-425 degrees Fahrenheit. Oil the grates to prevent sticking.
- Thread the marinated chicken, pineapple chunks, bell peppers, and onion wedges onto skewers, alternating them.
- Grill the kabobs for 10 to 14 minutes, turning every few minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Let the kabobs rest for 3 to 5 minutes before serving.
