- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 celery stalks, diced
- 3 medium potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup frozen peas
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and garlic, sautéing until translucent.
- Add the chicken breasts to the pot and cook until browned on both sides.
- Stir in the carrots, celery, and potatoes. Cook everything together for another 5 minutes.
- Pour in the chicken broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return it to the mix.
- Stir in the heavy cream and frozen peas, cooking for an additional 5 minutes.
- Adjust seasonings as needed. Garnish with fresh parsley if desired, and serve warm.

For extra creaminess, consider adding more heavy cream. A pinch of nutmeg enhances flavor.
