  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing until translucent.
  3. Add the chicken breasts to the pot and cook until browned on both sides.
  4. Stir in the carrots, celery, and potatoes. Cook everything together for another 5 minutes.
  5. Pour in the chicken broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer until the chicken is cooked through.
  6. Remove the chicken from the pot, shred it, and return it to the mix.
  7. Stir in the heavy cream and frozen peas, cooking for an additional 5 minutes.
  8. Adjust seasonings as needed. Garnish with fresh parsley if desired, and serve warm.
