Chocolate Strawberry Yogurt Clusters

Description

Delightful clusters of strawberries coated in creamy Greek yogurt and decadent chocolate, perfect for a sweet treat.


Ingredients

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly until the mixture is smooth and well integrated.
  2. Scoop about 2 tablespoons of the yogurt mixture onto the parchment-lined baking sheet, forming clusters.
  3. Place the baking sheet with the yogurt clusters in the freezer. Freeze until they are completely frozen and solid, about 60 to 120 minutes.
  4. Melt the chocolate by adding the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15 or 30-second intervals, stirring in between each interval until fully melted.
  5. Remove the frozen yogurt clusters from the freezer. Carefully dip each one into the melted chocolate using a spoon to ensure each cluster is thoroughly coated.
  6. Place each cluster back on the prepared baking sheet. For an added touch, sprinkle with sea salt if desired.
  7. Place the clusters back in the freezer for a few minutes to ensure the chocolate hardens and the yogurt solidifies a bit.

Notes

Keep leftover clusters in an airtight container in the freezer for future snacking.
