- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups grated zucchini
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
- Beat sugar and vegetable oil until smooth in another bowl. Add eggs one at a time, then stir in vanilla and zucchini.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Beat cream cheese with powdered sugar until smooth in a separate bowl.
- Pour half the batter into the prepared loaf pan, then swirl in the cream cheese mixture, and top with the remaining batter.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
For a richer chocolate flavor, consider adding chocolate chips to the batter. Ensure the zucchini is well-drained to avoid a soggy bread.
