A comforting and hearty soup made with split peas, ham bone, and fresh vegetables, perfect for chilly evenings.
Ingredients

- 1 lb split peas
- 1 ham bone
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken or vegetable broth
- 2 cups water
- Salt and pepper to taste
- 1 tsp thyme (optional)
Instructions
- Rinse split peas and set aside.
- In a large pot, sauté onions, carrots, and celery until softened (about 5-7 minutes).
- Add the ham bone, split peas, broth, and water to the pot. Stir well.
- Bring to a boil, then reduce heat to low and cover. Simmer for about 90-120 minutes, or until the peas are tender.
- Remove the ham bone and shred any meat from the bone. Return the meat to the soup.
- Season with salt, pepper, and thyme before serving.
Notes
For a thicker soup, use a potato masher to break up some peas. Consider soaking the split peas overnight for better results.
