Ingredients

  • 1 lb split peas
  • 1 ham bone
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • Salt and pepper to taste
  • 1 tsp thyme (optional)

Instructions

  1. Rinse split peas and set aside.
  2. In a large pot, sauté onions, carrots, and celery until softened (about 5-7 minutes).
  3. Add the ham bone, split peas, broth, and water to the pot. Stir well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for about 90-120 minutes, or until the peas are tender.
  5. Remove the ham bone and shred any meat from the bone. Return the meat to the soup.
  6. Season with salt, pepper, and thyme before serving.

Notes

For a thicker soup, use a potato masher to break up some peas. Consider soaking the split peas overnight for better results.
