Ingredients

  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1/4 cup light brown sugar
  • 3 teaspoons ground cinnamon
  • 2 large eggs
  • 3 tablespoons milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (for coating)
  • Powdered sugar (optional, for dusting)
  • 2 tablespoons unsalted butter (for cooking), plus more if needed

Instructions

  1. Combine the softened butter, brown sugar, and 3 teaspoons of cinnamon in a small bowl. Beat until smooth and creamy.
  2. Mix the granulated sugar and 1 teaspoon of cinnamon in another small bowl. Set aside for coating later.
  3. Whisk together the eggs and milk in a shallow bowl for the dipping mixture. Set aside.
  4. Trim the crusts from the bread slices. Use a rolling pin to flatten each slice to about 1/8 inch thickness.
  5. Spread a generous layer of the cinnamon butter mixture evenly over each flattened slice of bread.
  6. Roll up each slice tightly, starting from one end and finishing at the other. Secure the seam with a small dab of cinnamon butter if needed.
  7. Heat a non-stick pan over medium heat, and melt about 1 tablespoon of butter in the pan.
  8. Dip each roll-up into the egg mixture, ensuring all sides get coated. Allow excess to drip off.
  9. Place the roll-ups seam-side down in the hot pan, cooking in batches to avoid overcrowding. Add more butter as necessary.
  10. Cook for 2-3 minutes on each side, or until golden brown. Turn gently for even browning.
  11. Remove the cooked roll-ups from the pan and roll them in the cinnamon-sugar mixture, coating thoroughly.
  12. Dust with powdered sugar if desired, and serve warm with maple syrup.

Notes

Add chocolate chips or fruit for a fun twist. Ensure tight rolling to prevent bursting during cooking.
