A comforting ground beef potato soup that brings warmth and nostalgia, perfect for chilly evenings.

Ingredients

Scale
  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cups beef broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and carrots, and sauté until softened.
  2. Add the ground beef to the pot and cook until browned. Drain excess fat if necessary.
  3. Stir in the diced potatoes and beef broth. Bring to a boil.
  4. Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  5. Add milk and season with salt and pepper. Stir well and heat through.
  6. Serve hot, garnished with chopped parsley if desired.

Notes

For a richer flavor, consider using high-quality beef broth or homemade broth. Adjust seasonings to taste and experiment with additional spices if desired.
