- 4 medium potatoes, diced

Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and carrots, and sauté until softened.
- Add the ground beef to the pot and cook until browned. Drain excess fat if necessary.
- Stir in the diced potatoes and beef broth. Bring to a boil.
- Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Add milk and season with salt and pepper. Stir well and heat through.
- Serve hot, garnished with chopped parsley if desired.
