Instructions

- In another bowl, whisk together the pumpkin puree, Greek yogurt, milk, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour ¼ cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with maple syrup or your favorite toppings.
Notes
