  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 tablespoon honey (optional)
  • 4 cod fillets (about 6 oz each)
  • Fresh cilantro or parsley, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Sauce: In a medium bowl, combine the coconut milk, olive oil, curry powder, turmeric, ginger, chili powder (if using), minced garlic, lime juice, salt, and pepper. Whisk until well blended. If you prefer a touch of sweetness, add the honey and mix again.
  2. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper. Place the cod in the prepared baking dish and pour the coconut curry sauce over the fillets.
  3. Bake the Cod: Transfer the baking dish to the preheated oven. Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork. Garnish with chopped cilantro or parsley before serving. Serve with fresh lime wedges on the side for an extra zesty kick.

Notes

For extra creaminess, add more coconut milk while maintaining spice levels. Adjust chili for desired heat.
