Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. Whisk together the wet ingredients: cottage cheese, crushed pineapple, shredded coconut, honey, vegetable oil, and eggs until well combined.
  3. Combine the dry ingredients: all-purpose flour, sugar, baking powder, baking soda, and salt in a separate bowl.
  4. Mix the dry and wet ingredients until just combined, being careful not to overmix.
  5. Spoon the batter into the muffin cups, filling each about ⅔ full.
  6. Bake for 20-25 minutes, until golden brown and a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
