Description

Delicious Funfetti cupcakes filled with edible cookie dough and topped with cream cheese frosting and sprinkles.


Ingredients

  • 1 box Funfetti cake mix
  • Ingredients for cake mix (eggs, oil, water)
  • 1 cup edible cookie dough
  • 1 package cream cheese (softened)
  • 1/2 cup butter (softened)
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Prepare the Funfetti cake mix according to package instructions and fill the cupcake liners two-thirds full.
  3. Bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling completely.
  4. Once cupcakes are cooled, use a knife or a cupcake corer to remove a small amount of the center of each cupcake.
  5. Fill each cupcake with edible cookie dough.
  6. For the frosting, beat the cream cheese and butter together until creamy. Gradually add powdered sugar and mix until smooth. Add vanilla extract and mix well.
  7. Frost the filled cupcakes with the cream cheese frosting and top with more edible cookie dough and rainbow sprinkles.
  8. Serve and enjoy!

Notes

For added flavor, consider adding a pinch of salt to the frosting. Freeze assembled cupcakes for later enjoyment.
