Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese, maple syrup, and vanilla in a blender. Blend until smooth.
  3. Mix oats, cinnamon, baking powder, and salt in a mixing bowl.
  4. Pour the cottage cheese mixture into the dry ingredients and mix well. If using, fold in flour, nuts, or chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until the cookies are set and lightly browned.
