- ½ cup maple syrup

- ¼ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the cottage cheese, maple syrup, and vanilla in a blender. Blend until smooth.
- Mix oats, cinnamon, baking powder, and salt in a mixing bowl.
- Pour the cottage cheese mixture into the dry ingredients and mix well. If using, fold in flour, nuts, or chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until the cookies are set and lightly browned.
- Let cool for a few minutes before transferring to a wire rack. Serve warm or store for a make-ahead breakfast.
Notes
For enhanced flavor, toast the oats before mixing. Letting the dough rest before baking can create a chewier cookie.
