Description

Delicious, spicy, and sweet pickled eggs infused with jalapenos, perfect for snacking or as an appetizer.


Ingredients

  • 810 hard-boiled eggs
  • 2 cups apple cider vinegar
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • 1 cup sliced jalapenos

Instructions

  1. Hard-boil the eggs using your preferred method. After cooking, let them cool and peel them.
  2. Slice the jalapenos about 1/4 inch thick. Consider wearing gloves while handling them. If you want more heat, you can leave the seeds in.
  3. Prepare the pickling brine by combining the apple cider vinegar, white sugar, brown sugar, garlic powder, ground turmeric, cayenne pepper, and sliced jalapenos in a saucepan. Heat the mixture until the sugars dissolve and the jalapenos become tender.
  4. Place the peeled eggs in your wide-mouth jar and layer them with the jalapenos using a slotted spoon.
  5. Pour the brine over the eggs, leaving about 1/4 inch of headspace at the top.
  6. Let the jar sit for 30 minutes before sealing it with the lid.
  7. Once cooled to room temperature, place the jar in the refrigerator. Allow the eggs to marinate for at least a few days for the flavors to fully develop.

Notes

For enhanced flavor, consider adding fresh herbs like dill or thyme to the brine.
