- 8–10 hard-boiled eggs
- 2 cups apple cider vinegar
- 1 cup white sugar
- 1 cup brown sugar
- 1 tsp garlic powder
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 1 cup sliced jalapenos
Instructions
- Hard-boil the eggs using your preferred method. After cooking, let them cool and peel them.
- Slice the jalapenos about 1/4 inch thick. Consider wearing gloves while handling them. If you want more heat, you can leave the seeds in.
- Prepare the pickling brine by combining the apple cider vinegar, white sugar, brown sugar, garlic powder, ground turmeric, cayenne pepper, and sliced jalapenos in a saucepan. Heat the mixture until the sugars dissolve and the jalapenos become tender.
- Place the peeled eggs in your wide-mouth jar and layer them with the jalapenos using a slotted spoon.
- Pour the brine over the eggs, leaving about 1/4 inch of headspace at the top.
- Let the jar sit for 30 minutes before sealing it with the lid.
- Once cooled to room temperature, place the jar in the refrigerator. Allow the eggs to marinate for at least a few days for the flavors to fully develop.
Notes
For enhanced flavor, consider adding fresh herbs like dill or thyme to the brine.
