Instructions
- Sauté onion, garlic, carrots, and celery in a large pot until softened.
- Add chicken breasts and chicken broth, bringing to a boil.
- Reduce heat and simmer until the chicken is cooked through.
- Remove chicken, shred, and set aside.
- Stir in orzo pasta and cook until al dente.
- Return shredded chicken to the pot, add lemon juice, and season with salt and pepper.
