  • 1 cup (240 ml) fresh or dried cranberries (100 grams)
  • For the glaze:
  • 1 cup (240 ml) powdered sugar (120 grams)
  • 2 tablespoons (30 ml) orange juice (30 milliliters)
  • 1/2 teaspoon (3 ml) orange zest

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the chilled, cubed butter to the flour mixture.
  4. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  5. In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and orange zest.
  6. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  7. Fold in the cranberries until evenly distributed.
  8. Turn the dough out onto a lightly floured surface and knead gently for a few seconds.
  9. Shape the dough into a circle about 1-inch thick.
  10. Cut the circle into 8 equal wedges.
  11. Place the wedges onto the prepared baking sheet, leaving space between each scone.
