- 2/3 cup (160 ml) coconut cream (160 milliliters)
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 tablespoon (15 ml) orange zest
- 1 cup (240 ml) fresh or dried cranberries (100 grams)
- For the glaze:
- 1 cup (240 ml) powdered sugar (120 grams)
- 2 tablespoons (30 ml) orange juice (30 milliliters)
- 1/2 teaspoon (3 ml) orange zest
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the chilled, cubed butter to the flour mixture.
- Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
- In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and orange zest.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Fold in the cranberries until evenly distributed.
- Turn the dough out onto a lightly floured surface and knead gently for a few seconds.
- Shape the dough into a circle about 1-inch thick.
- Cut the circle into 8 equal wedges.
- Place the wedges onto the prepared baking sheet, leaving space between each scone.
- Bake for 15-20 minutes or until the scones are golden brown.
- Remove from the oven and let them cool on a wire rack.
- While the scones cool, prepare the glaze by whisking together the powdered sugar, orange juice, and orange zest.
- Drizzle the glaze over the cooled scones and allow it to set.
- Serve and enjoy.
Notes
- Ensure the beef tallow is well chilled before adding to the flour mixture for a flaky texture.
- Aim for pea-sized crumbs when cutting in the butter for light and airy scones.
- For a burst of flavor, opt for fresh cranberries or dried cranberries as a substitute.
