Description

A cozy and comforting cream of mushroom soup made with a blend of shiitake and crimini mushrooms, perfect for chilly days.


Ingredients

Scale
  • 2 cups fresh shiitake mushrooms, sliced
  • 2 cups fresh crimini mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons sherry
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Heat the olive oil or butter in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Put in the minced garlic and cook for another minute.
  4. Stir in the sliced shiitake and crimini mushrooms and cook until softened, about 7-10 minutes.
  5. Pour in the vegetable or chicken broth and bring to a simmer.
  6. Add the sherry and thyme, and season with salt and pepper.
  7. Allow the soup to simmer for 15-20 minutes.
  8. Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender.
  9. Return to the pot, stir in the heavy cream, and heat through before serving.

Notes

For a chunkier texture, blend only half of the soup. Can substitute heavy cream with half-and-half or non-dairy alternatives for a lighter version.
