Description
A cozy and comforting cream of mushroom soup made with a blend of shiitake and crimini mushrooms, perfect for chilly days.
Ingredients

- 2 cups fresh shiitake mushrooms, sliced
- 2 cups fresh crimini mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons sherry
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Heat the olive oil or butter in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Put in the minced garlic and cook for another minute.
- Stir in the sliced shiitake and crimini mushrooms and cook until softened, about 7-10 minutes.
- Pour in the vegetable or chicken broth and bring to a simmer.
- Add the sherry and thyme, and season with salt and pepper.
- Allow the soup to simmer for 15-20 minutes.
- Use an immersion blender to blend the soup until smooth, or carefully transfer to a blender.
- Return to the pot, stir in the heavy cream, and heat through before serving.
Notes
For a chunkier texture, blend only half of the soup. Can substitute heavy cream with half-and-half or non-dairy alternatives for a lighter version.
