Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent.
- Toss in the chopped carrots and broth.
- Bring the mixture to a boil, then reduce the heat and let it simmer until the carrots are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
