Ingredients

- 4 cups vegetable broth
- 1 cup coconut milk

Instructions
- Heat olive oil over medium heat in a large pot.
- Add the chopped onion and garlic; sauté until translucent.
- Stir in the sliced mushrooms and cook until softened.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for about 15 minutes.
- Stir in the coconut milk and rosemary; blend until smooth using an immersion blender.
- Season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
