Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef on all sides, then transfer to the crock pot.
  2. Add the carrots, potatoes, onion, and garlic to the crock pot.
  3. In a separate bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over the ingredients in the crock pot.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
  5. Serve hot and enjoy your comforting beef stew.

Notes

For thicker stew, mix a tablespoon of cornstarch with cold water and stir it in during the last 30 minutes of cooking. Fresh herbs can elevate flavors.
