Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef on all sides, then transfer to the crock pot.
- Add the carrots, potatoes, onion, and garlic to the crock pot.
- In a separate bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over the ingredients in the crock pot.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
- Serve hot and enjoy your comforting beef stew.
Notes
For thicker stew, mix a tablespoon of cornstarch with cold water and stir it in during the last 30 minutes of cooking. Fresh herbs can elevate flavors.
