Ingredients
- Potatoes, peeled and diced
- Onions, diced
- Milk
- Cream cheese
- Cheddar cheese
- Ranch seasoning packet
- Cornstarch (optional, for thickening)
- Salt and pepper to taste
Instructions
- Add diced potatoes and onions to the slow cooker.
- Pour in milk and add cream cheese.
- Add ranch seasoning packet.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Mash some potatoes to desired consistency.
- Add cheddar cheese and stir until melted.
- If needed, thicken with cornstarch slurry.
- Season to taste and serve.
Notes
- For dairy-free version: use coconut milk, plant-based cream cheese, and nutritional yeast.
- To thicken: mash more potatoes or use cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water).
- Can be prepped the night before – chop ingredients and store separately.
