A hearty and comforting crock pot pot roast that brings family together with tender meat and vibrant vegetables.
Ingredients

- 3–4 lbs chuck roast
- 4 large carrots, chopped
- 4 potatoes, chopped
- 1 onion, cut into wedges
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Optional: 2 tablespoons cornstarch (for gravy)
Instructions
- Place the chopped carrots, potatoes, onion, and garlic in the bottom of the slow cooker.
- Season the chuck roast with salt and pepper, placing it on top of the vegetables.
- Pour in the beef broth and Worcestershire sauce.
- Cover and cook on low for 480-600 minutes or until the meat is tender.
- For optional gravy, remove the roast and vegetables. Mix cornstarch with a little water, then stir into the broth and cook on the stovetop until thickened. Serve.
Notes
Consider searing the roast before cooking for enhanced flavor. Add herbs or spices for a personal touch.
