A comforting crockpot pot roast made with tender beef and flavorful vegetables, perfect for family gatherings.


Ingredients

  • 23 pounds beef roast
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 onion, sliced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
  2. Place the carrots, potatoes, and onion in the slow cooker.
  3. Add the seared beef roast on top of the vegetables.
  4. In a bowl, mix the beef broth, Worcestershire sauce, garlic, salt, and pepper. Pour this mixture over the beef and vegetables.
  5. Cover and cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
  6. Serve warm with the vegetables and gravy.

Notes

Let the pot roast rest before slicing to redistribute juices for tender slices. You can use the cooking liquid to make gravy.
