Ingredients

- 2–3 pounds beef roast
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, sliced
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Place the carrots, potatoes, and onion in the slow cooker.
- Add the seared beef roast on top of the vegetables.
- In a bowl, mix the beef broth, Worcestershire sauce, garlic, salt, and pepper. Pour this mixture over the beef and vegetables.
- Cover and cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
- Serve warm with the vegetables and gravy.
Notes
Let the pot roast rest before slicing to redistribute juices for tender slices. You can use the cooking liquid to make gravy.
