- 1 small onion (diced)
- 3 cloves garlic (minced)
- 3 large potatoes (peeled and diced)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 4 cups beef broth
- 1 cup water
- 1 can diced tomatoes
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 cup milk or heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons cornstarch
- Chopped fresh parsley (for garnish)
- Extra shredded cheese (for garnish)
- Crumbled bacon (for garnish)
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Add the diced onion and garlic, sautéing for 2-3 minutes until fragrant. Drain any excess grease if needed.
- Add the diced potatoes, carrots, and celery to the pot. Pour in the beef broth and water, then add the can of diced tomatoes. Stir in the Worcestershire sauce, Italian seasoning, salt, pepper, and smoked paprika.
- Bring the mixture to a boil, then reduce the heat to low. Simmer for 20 minutes, or until the potatoes and vegetables are tender.
- Stir in the milk (or heavy cream) and shredded cheddar cheese. For a thicker soup, mix the cornstarch with ¼ cup of water and stir it into the soup. Allow to simmer for an additional 5 minutes.
- Ladle the soup into bowls and garnish with fresh parsley, extra cheese, or crispy bacon. Serve with crusty bread or dinner rolls.

For extra heat, consider incorporating diced jalapeños or red pepper flakes.
