A delicious and simple recipe for moist baked cod topped with a crispy panko crust, perfect for family gatherings.

- 4 cod fillets (5–6 ounces, skinless and boneless)
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
- 1 clove garlic (minced)
- 1 lemon (zested and juiced)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Combine panko breadcrumbs, olive oil, Dijon mustard, fresh parsley, fresh dill, minced garlic, lemon zest, salt, and pepper in a medium bowl until well blended.
- Place the cod fillets in the prepared baking dish and drizzle lemon juice over them. Season each fillet with a pinch of salt and pepper.
- Spoon the panko mixture evenly over the top of each cod fillet, pressing gently to help it adhere.
- Bake the cod in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork. The topping should be golden brown.
- Remove from the oven and let rest for a few minutes before serving. Garnish with extra lemon wedges if desired.

Try adding different herbs or spices to the panko topping for additional flavor variations.
