Easy Air Fryer Cod with Herby Mayo and Asparagus

Description

A flavorful and quick dish featuring tender cod fillets paired with creamy herby mayo and vibrant asparagus.


Ingredients

  • 25g parsley, rinsed and chopped
  • 12g chives, rinsed and chopped
  • 1 Lemon, zested and cut into wedges
  • 2 large tins (700g) butter beans, rinsed and drained
  • 125ml chicken, fish, or vegetable stock
  • 15g grated parmesan cheese
  • 2 tbsp crème fraîche
  • 1 garlic clove, minced
  • 1 pack asparagus, trimmed and cut into 34 cm pieces
  • 4 cod fillets
  • 2 tbsp mayonnaise

Instructions

  1. Preheat the air fryer to 200°C (390°F).
  2. Rinse and chop the parsley and chives finely, then zest the lemon.
  3. Combine the chopped parsley, chives, and lemon zest in a bowl. Set aside ¼ of this mixture for later to coat the cod.
  4. Mix the butter beans, stock, parmesan cheese, large herb mixture, crème fraîche, and minced garlic in a roasting dish.
  5. Air fry for 10 minutes at 180°C (355°F) or bake in the oven for 13 minutes at 190°C (375°F) until thickened.
  6. Prepare the asparagus by trimming and cutting it into small pieces.
  7. Mix the reserved herb mixture with mayonnaise and 1 tbsp of lemon juice, seasoning to taste.
  8. Pat the cod fillets dry, season, and spread herby mayo on top.
  9. Add the asparagus to the roasting dish and arrange the cod fillets on top.
  10. Cook in the air fryer for 7-12 minutes or in the oven for 7-12 minutes, until the cod flakes easily.
  11. Serve immediately with lemon wedges on the side.

Notes

For best results, allow the cod to reach room temperature before cooking. Adjust seasoning to taste.
