Description
A flavorful and quick dish featuring tender cod fillets paired with creamy herby mayo and vibrant asparagus.

- 25g parsley, rinsed and chopped
- 12g chives, rinsed and chopped
- 1 Lemon, zested and cut into wedges
- 2 large tins (700g) butter beans, rinsed and drained
- 125ml chicken, fish, or vegetable stock
- 15g grated parmesan cheese
- 2 tbsp crème fraîche
- 1 garlic clove, minced
- 1 pack asparagus, trimmed and cut into 3–4 cm pieces
- 4 cod fillets
- 2 tbsp mayonnaise
Instructions
- Preheat the air fryer to 200°C (390°F).
- Rinse and chop the parsley and chives finely, then zest the lemon.
- Combine the chopped parsley, chives, and lemon zest in a bowl. Set aside ¼ of this mixture for later to coat the cod.
- Mix the butter beans, stock, parmesan cheese, large herb mixture, crème fraîche, and minced garlic in a roasting dish.
- Air fry for 10 minutes at 180°C (355°F) or bake in the oven for 13 minutes at 190°C (375°F) until thickened.
- Prepare the asparagus by trimming and cutting it into small pieces.
- Mix the reserved herb mixture with mayonnaise and 1 tbsp of lemon juice, seasoning to taste.
- Pat the cod fillets dry, season, and spread herby mayo on top.
- Add the asparagus to the roasting dish and arrange the cod fillets on top.
- Cook in the air fryer for 7-12 minutes or in the oven for 7-12 minutes, until the cod flakes easily.
- Serve immediately with lemon wedges on the side.
Notes
For best results, allow the cod to reach room temperature before cooking. Adjust seasoning to taste.
