This easy baked cod recipe features fresh cod filets topped with a flavorful herb-butter mixture and lemon slices, creating a healthy and delicious meal that melts in your mouth.

- 4 fresh cod filets
- 1 tsp kosher salt (adjust to taste)
- 1 tsp freshly ground black pepper (adjust to taste)
- 1/2 cup softened butter
- 2 tbsp extra virgin olive oil
- 3 cloves minced garlic
- 1/4 cup fresh herbs (parsley, chives, thyme, or similar)
- 1 tsp paprika
- 1 medium lemon (thinly sliced)
Instructions
- Combine softened butter, minced garlic, fresh herbs, paprika, and a pinch of salt and pepper in a bowl and mix well.
- Place the cod filets in a greased baking dish and season with kosher salt and freshly ground black pepper.
- Spread the herb-butter mixture generously over each piece of cod.
- Layer the lemon slices over the top of the filets.
- Drizzle a little extra virgin olive oil over the dish.
- Bake in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork.
Notes
Use a meat thermometer to check for doneness; cod is perfectly cooked at 145°F (63°C). Experiment with different herbs and spices for added flavor.
