Ingredients

  • 1/4 cup (60 ml) Warm Water
  • 1/4 cup (60 ml) Granulated Sugar Or Brown Sugar
  • 2 1/4 teaspoon (11 ml) s Active Dry Yeast (1 packet)
  • 1 cup (240 ml) Milk
  • 1/4 cup (60 ml) Butter
  • 1 whole Egg, Beaten
  • 3 1/2 cup (840 ml) s All-Purpose Flour or Whole Wheat Pastry Plus up to additional 1/4 cup (60 ml)
  • 1 1/4 teaspoon (6 ml) s Salt
  • Additional Butter For Greasing Bowl, Pans, and Buttering Tops Of Rolls

Instructions

  1. In a mixer equipped with a dough hook, combine the warm water, your choice of sugar, and yeast. Stir until the yeast dissolves, then let it sit for 5-8 minutes until it gets frothy.
  2. In a small pot, warm up the milk and butter until the butter melts completely. Let the mixture cool down to below 110 degrees.
  3. Pour the cooled butter and milk mixture into the frothy yeast mixture, along with the beaten egg. Mix thoroughly until everything is well integrated.
  4. Add the full amount of flour and the salt. Knead at a low setting until blended, then increase the speed to medium and continue kneading for 5-6 minutes until the dough is smooth and soft.
  5. Transfer the dough to a bowl that has been greased with butter and cover it with plastic wrap or a damp cloth. Leave it in a warm, draft-free spot to rise for about 1 to 1 1/2 hours, or until it has doubled in size.
  6. Grease 16 standard muffin tin cups with butter.
  7. Cut the dough into 48 equal portions, each the size of a ping pong ball. Arrange three of these balls in each muffin tin cup to create a cloverleaf shape.
  8. Cover the muffin tins and let the dough rise until it doubles in size, or place it in the fridge until needed. If refrigerated, allow an hour for it to reach room temperature and double in size before proceeding.
  9. Set your oven to 350 degrees to preheat.
  10. Apply a layer of butter to the top of the rolls and bake them for 25-30 minutes until they are lightly browned.
  11. Once out of the oven, brush the rolls with more butter.
  12. Enjoy them warm.
