Description

Easy drop biscuits are fluffy and delightful, perfect for pairing with soups or enjoyed with butter.

Ingredients

Scale
  • 240 grams (2 cups) all-purpose flour
  • 14 grams (1 tablespoon) baking powder
  • 1 ¼ teaspoons kosher salt
  • 113 grams (½ cup, 1 stick) unsalted butter, very cold and cut into small pieces
  • 170227 grams (¾1 cup) milk or buttermilk

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Whisk together the flour, baking powder, and salt in a large bowl.
  3. Add the pieces of cold butter and cut them into the dry ingredients until the mixture resembles coarse meal.
  4. If you wish to incorporate cheeses or other add-ins, stir them in now.
  5. Add the smaller amount of milk or buttermilk and gently stir until just combined. If the batter is very dry, add a little more milk to achieve a thick batter consistency. Don’t over-mix; the batter should be lumpy.
  6. Using a 2-ounce cookie scoop, drop large mounds of dough onto a parchment-lined baking sheet or buttered cast iron skillet. The mounds can touch.
  7. Bake for 16-20 minutes until golden brown.
  8. Brush with melted butter and sprinkle with flaky salt if desired.

Notes

Use very cold butter for better texture. Experiment with add-ins like cheese or herbs for extra flavor.
