- 240 grams (2 cups) all-purpose flour
- 14 grams (1 tablespoon) baking powder
- 1 ¼ teaspoons kosher salt
- 113 grams (½ cup, 1 stick) unsalted butter, very cold and cut into small pieces
- 170–227 grams (¾–1 cup) milk or buttermilk
Instructions
- Preheat the oven to 450°F (230°C).
- Whisk together the flour, baking powder, and salt in a large bowl.
- Add the pieces of cold butter and cut them into the dry ingredients until the mixture resembles coarse meal.
- If you wish to incorporate cheeses or other add-ins, stir them in now.
- Add the smaller amount of milk or buttermilk and gently stir until just combined. If the batter is very dry, add a little more milk to achieve a thick batter consistency. Don’t over-mix; the batter should be lumpy.
- Using a 2-ounce cookie scoop, drop large mounds of dough onto a parchment-lined baking sheet or buttered cast iron skillet. The mounds can touch.
- Bake for 16-20 minutes until golden brown.
- Brush with melted butter and sprinkle with flaky salt if desired.
Notes
Use very cold butter for better texture. Experiment with add-ins like cheese or herbs for extra flavor.
