A healthier and delicious cake made with oats and fresh carrots, perfect for celebrations or as an afternoon snack.
Ingredients

- 2 eggs
- ½ cup honey
- 2 carrots, shredded
- 1 cup oats
- ½ tsp baking soda
- 1 tbsp cinnamon
- ¼ cup butter, room temperature
- 1 tsp vanilla
Instructions
- Preheat your oven to 180C/300F.
- Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender.
- Stir in the shredded carrot.
- Line a small baking pan with parchment paper.
- Spread the mixture in the pan and bake at 180C/350F for 20-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool off, slice, and enjoy!
Notes
Consider adding a pinch of nutmeg for extra warmth and use yogurt to add richness if needed.
