Easy Flourless Oatmeal Carrot Cake

Description

A healthier and delicious cake made with oats and fresh carrots, perfect for celebrations or as an afternoon snack.


Ingredients

Scale
  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180C/300F.
  2. Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender.
  3. Stir in the shredded carrot.
  4. Line a small baking pan with parchment paper.
  5. Spread the mixture in the pan and bake at 180C/350F for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool off, slice, and enjoy!

Notes

Consider adding a pinch of nutmeg for extra warmth and use yogurt to add richness if needed.
