Ingredients

  • 1 package rolled pie crust (2-count, 7.5 oz)
  • 1 cup plus 2 tablespoons jam or preserves
  • 1 large egg (for the egg wash)
  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 2 tablespoons jam (for icing)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lay a sheet of parchment on a baking sheet and unroll the crust onto another sheet of parchment.
  3. Cut the crust into approximately 3-inch by 5-inch rectangles.
  4. Knead the remaining crust together, roll it out thin again, and cut additional rectangles as needed.
  5. Beat the egg for an egg wash in a small bowl.
  6. Lay out eight rectangles on the parchment-lined baking sheet and add 1.5 tablespoons of jam to the center of each.
  7. Brush the edges of the rectangle with the egg wash.
  8. Place another rectangle on top and gently pinch the edges to seal.
  9. Crimp the edges with a fork and poke holes in the top for ventilation.
  10. Apply the egg wash over the entire top.
  11. Bake for about 12-15 minutes or until golden brown.
  12. Whisk together powdered sugar, milk or cream, jam, and vanilla extract to prepare icing after cooling.
  13. Spread the frosting over each tart and enjoy!

Notes

Chilling the pie crust before rolling helps maintain flakiness. For extra crunch, sprinkle a little sugar on top before baking.
