Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and garlic, and sauté until softened.
- Add ground beef and cook until browned.
- Stir in diced potatoes and beef broth.
- Season with salt and pepper to taste.
- Bring to a simmer, cover, and cook for 20-25 minutes until potatoes are tender.
- Serve hot, garnished with chopped parsley if desired.
